Looks nice... but I just made two sous vide setups for about $125 bucks... by searching eBay for mislabeled surplus immersion circulators that were being sold locally. Ka-ching! After a standard decontamination on each, have a Haake and a Cole Parmer now... Two Cambro 18 quart containers and both setups are excellent.

I bet you all hate me now.

I'll second Tami's recommendation of the #27 Bun combo. I had that on my first visit to Pho Dai Loi 2 and loved it. I have yet to try the Pho there, but plan to do so next time I visit.

Wow, great recipe! Excellent results at home when I made it. I just replaced the ham by some Spanish iberico de bellota ham, also called black hoof or pata negra for an improved and more refine taste. Definitely one recipe to keep on my cooking book.
If you need to find jamon iberico, go to BuyJamon.com

This is my fave pho in town, for sure. You're spot on about the broth - they get depth of flavor in theirs that most people don't. As hard as it is for me to not have pho here, on one of your next visits, have the #27 Bun combo - all sorts of stuff including spring roll on top of the noodles with all the fixins. It's beyond.
